Bikini

Serves 10 servings

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Put the listed items into a pot, heat until it reaches a gentle boil, agitating so the sugar melts. Next, take off the heat and leave to cool entirely. Pour into an sealable bottle, close it and store chilled, where it will keep for around a month.

For the Cocktail Base: Mix the specified liquid ingredients in a sizeable container, leave to sit for one hour, then filter it , ideally through cheesecloth, making it fully clarified.

For serving: Pour 85ml of your premix into a stirring glass packed with ice, gently stirring carefully for about 60 seconds to cool it down. Pour into a cold coupe glass or a similar vessel, decorate with the cranberries and complete it by giving it a brief mist of the essential oil over the drink.
